Ingredients

  • ⅓ cup low-sodium chicken broth
  • ⅓ cup water
  • 3 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon tapioca starch
  • 1 inch fresh ginger, peeled
  • 2 garlic cloves
  • pounds boneless, skinless chicken thighs, cut into 12 inch pieces
  • 1 full bunch green onions, sliced into 1-inch lengths
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Soak bamboo skewers in water for 20 minutes if using.
  2. Blend broth, water, vinegar, honey, tapioca starch, ginger, and garlic until smooth.
  3. Heat blended mixture in saucepan until thickened, about 2-3 minutes. Reserve half for serving.
  4. Thread chicken and green onions onto skewers alternately. Season with salt and pepper.
  5. Preheat oiled grill to medium-high. Grill skewers 2 minutes per side.
  6. Brush with glaze, grill 2 minutes, flip, glaze other side, and grill final 2 minutes until chicken reaches 165°F.
  7. Transfer to platter, sprinkle with sesame seeds, and serve with remaining glaze.
