Chili Lime Salmon

Zesty chili lime salmon with roasted sweet potatoes, bell peppers, and fresh mango salsa – an easy sheet pan dinner packed with flavor.

 

Ingredients

  • 4 salmon fillets
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon red chili flakes
  • Salt and black pepper, to taste
  • 3 tablespoons olive oil, divided
  • 1 large sweet potato, peeled and cut into small cubes
  • 2 red or orange bell peppers, thinly sliced
  • 1 yellow onion, thinly sliced
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • Zest and juice of 2 limes
  • 1 tablespoon honey
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh basil
  • 23 green onions, thinly sliced
  • Cooked rice or quinoa, for serving
  • For the Mango Salsa
  • 1 ripe mango, diced
  • 1 jalapeño, seeds removed and finely chopped
  • Zest and juice of 1 lime

Instructions

  1. Preheat oven to 425°F. Toss sweet potato cubes with 1 tablespoon olive oil, salt, pepper, and chili flakes. Roast for 20–25 minutes, flipping halfway.
  2. Season salmon with chili powder, smoked paprika, red chili flakes, salt, and black pepper. Rub with 1 tablespoon olive oil.
  3. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté peppers and onion for 3–5 minutes until softened. Set aside.
  4. In the same skillet, cook salmon skin-side down for 2–3 minutes, then flip for another 2–3 minutes. Remove and set aside.
  5. Add butter and garlic to the skillet, cook 1–2 minutes. Add lime zest, juice, honey, herbs, and green onions. Simmer briefly, then return salmon and spoon sauce over fillets.
  6. Mix mango, jalapeño, lime zest, and juice to make salsa.
  7. Serve salmon over rice or quinoa with vegetables and mango salsa, drizzled with extra sauce.
