This smoky, creamy chipotle mayo combines the richness of mayonnaise with the heat of chipotle peppers for a versatile sauce that elevates everything from sandwiches to tacos.

Ingredients

  • 1 & 1/2 cups high quality mayonnaise
  • 36 chipotle peppers from a can
  • 23 tablespoons adobo sauce from the can
  • 1/4 cup cilantro, packed
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt, use 1/4 tsp for table salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cumin

 

Instructions

  1. Add all ingredients to a blender and blend until smooth.
  2. Start with 3 chipotle peppers and add more if you prefer more heat.
  3. Begin with 1-2 tablespoons adobo sauce if you’re concerned about spice level.
  4. Add additional lime juice for more tanginess if desired.
  5. For thinner consistency, add water or milk one tablespoon at a time.
  6. Store in squeeze bottles or airtight containers in the refrigerator.

 

Notes

For a milder sauce, remove seeds from the chipotle peppers before blending. Refrigerate for up to 10 days.
