chocolate fudge cake

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: 1 tbsp instant espresso powder
  • Optional: ½ tsp cinnamon
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (180°C) and thoroughly grease a 9-inch round cake pan.
  2. In a large bowl whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl combine milk, oil, eggs, and vanilla extract; whisk until smooth and fully incorporated.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined – be careful not to overmix.
  5. Fold in chocolate chips evenly throughout the batter.
  6. Pour batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes until a toothpick comes out with a few moist crumbs (not wet batter).
  8. Transfer to a wire rack and let cool for 15-20 minutes before serving warm.

Notes

  • For the richest flavor, use Dutch-processed cocoa powder.
  • Room temperature ingredients create a smoother batter that bakes more evenly.
  • This dessert is best enjoyed warm when the pudding layer is still gooey.
  • To reheat leftovers, microwave individual portions for 20-30 seconds on medium power.
