Instructions

  1. Preheat your waffle iron and mist with nonstick spray.
  2. Whisk together flour, cocoa powder, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Beat egg whites until stiff peaks form and set aside.
  4. Mix egg yolks, oil, milk, coffee, and vanilla in a separate bowl.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Gently fold in the egg whites until incorporated.
  7. Pour batter onto hot waffle iron and cook according to manufacturer’s directions.
  8. Serve immediately with desired toppings.

Notes

Coffee enhances the chocolate flavor without making the waffles taste like coffee. If you prefer, you can substitute hot water or additional milk.
