Chipotle Chicken Salad

A smoky, creamy chicken salad with the perfect kick of heat from chipotle peppers in adobo sauce.

 

Ingredients

  • 2.5 cups shredded rotisserie chicken
  • 2 tbsp green onion (more for garnish)
  • 1/3 cup celery, finely chopped

Chipotle sauce:

  • 1/2 cup mayo
  • 2 tbsp plain greek yogurt
  • 45 chipotle peppers in adobo sauce (in a can)
  • 1/2 juice of lemon
  • 1 garlic clove
  • 3 fresh basil leaves
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Shred rotisserie chicken into bite-sized pieces and place in a large bowl.
  2. Combine all sauce ingredients in a blender: mayo, Greek yogurt, chipotle peppers, garlic, basil, lemon juice, salt and pepper. Blend until smooth.
  3. Add chopped celery and green onion to the shredded chicken.
  4. Pour chipotle sauce over the chicken mixture and gently fold until evenly coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes
