  • 6 large eggs
  • 4 frozen hash brown patties
  • 1/2 medium white onion, diced
  • 1 large bell pepper, diced
  • 1 1/2 cups shredded cheese
  • Salt and black pepper
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1 tablespoon chopped cilantro
  • 4 large flour tortillas

Instructions

  1. Bake hash browns until crispy, then set aside.
  2. Cook chorizo with onions and peppers until meat is fully cooked and vegetables are soft.
  3. Add beaten eggs to the skillet and gently scramble until just cooked.
  4. Prepare guacamole by mashing avocados with lime juice, salt, and cilantro.
  5. Assemble burritos by layering hash browns, chorizo-egg mixture, cheese, and guacamole on warmed tortillas.
  6. Fold sides in, roll up tightly, and toast in a skillet until golden.

Notes
