Ingredients

Scale
  • 1 cup long-grain jasmine rice, rinsed well and drained
  • 1½ cups water
  • 3 teaspoons extra-virgin olive oil
  • 1 small garlic clove, finely minced
  • 2 scallions, finely chopped
  • 1 teaspoon lime zest

  • ½ cup finely chopped fresh cilantro
  • Pinch red pepper flakes, or ¼ diced jalapeño, optional

Instructions

  1. Combine rice, water, and 1 teaspoon olive oil in a medium saucepan with lid. Bring to boil.
  2. Cover, reduce heat to simmer for 20 minutes (or follow package instructions).
  3. Remove from heat, uncover and fluff with fork.
  4. Add garlic, scallions, and lime zest, stirring to combine. Cool for 1 minute.
  5. Add remaining 2 teaspoons olive oil, salt, lime juice, cilantro, and optional red pepper flakes or jalapeño.
  6. Stir to combine and season to taste before serving.

Notes

For best results, rinse the rice thoroughly before cooking to remove excess starch. Add the cilantro at the end to preserve its bright color and fresh flavor.
