Cilantro Lime Sauce

  • 1 cup fresh cilantro leaves, packed
  • 2 tablespoons lime juice (about 1 large lime)
  • 1 garlic clove, minced
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ jalapeño pepper, seeds removed (optional, for heat)
  • 1 teaspoon lime zest (optional, for extra citrus flavor)
  • ¼ teaspoon ground cumin (optional, for earthiness)

Instructions

  1. Thoroughly wash and dry 1 cup of cilantro leaves, removing thick stems.
  2. Add cilantro, lime juice, and garlic to a blender or food processor.
  3. Pulse 5-6 times until coarsely chopped.
  4. With the blender running on low, slowly drizzle in the olive oil.
  5. Add salt and pepper to the mixture.
  6. Blend for 30-45 seconds until completely smooth.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately or refrigerate in an airtight container for up to 3 days.

Notes

  • For a creamier version, add half an avocado or 2 tablespoons of Greek yogurt.
  • The tender cilantro stems contain lots of flavor – don’t waste them!
  • To keep the sauce bright green longer, place plastic wrap directly on the surface before refrigerating.
