Ingredients

Scale
  • 6 cinnamon rolls, thawed and quartered
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons butter, for greasing dish
  • Powdered sugar, for serving
  • Optional Add-ins:
  • 1/2 cup chopped pecans or walnuts
  • 1 cup diced apples
  • 4 ounces cream cheese, cut into small pieces
  • 1/4 teaspoon ground nutmeg
  • For Serving (Optional):
  • Maple syrup
  • Fresh berries
  • Whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Generously grease a 9×13-inch baking dish with butter.
  2. Cut the thawed cinnamon rolls into quarters and arrange them evenly in the prepared baking dish.
  3. In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, and salt until completely smooth.
  4. Slowly pour the egg mixture over the cinnamon roll pieces, pressing down gently with a spatula to ensure all pieces are soaking in the custard.
  5. If using optional add-ins like nuts, diced apples, or cream cheese, scatter them evenly over the top and between cinnamon roll pieces.
  6. Let the mixture sit for 15-20 minutes to allow the rolls to absorb the custard (or refrigerate overnight if preparing ahead).
  7. Bake for 35-40 minutes, or until the top is golden brown and the center is set but still slightly jiggly. If browning too quickly, cover loosely with foil.
  8. Remove from oven and let cool for 10-15 minutes before serving (the casserole will continue to set as it cools).
  9. Dust generously with powdered sugar just before serving.
  10. Serve warm with maple syrup, fresh berries, or whipped cream if desired.

Notes

For a make-ahead option, prepare the casserole the night before and refrigerate overnight, then bake in the morning.

This casserole freezes well for up to 3 months – simply thaw overnight in the refrigerator before reheating.

For extra richness, drizzle with a simple cream cheese glaze made from 4 oz softened cream cheese, 1/2 cup powdered sugar, 2-3 tbsp milk, and 1/2 tsp vanilla extract.
