Classic Chicken Salad

Ingredients

  • ⅔ cup mayonnaise, best quality such as Hellmann’s or Duke’s
  • ¼ cup sour cream
  • 1½ tablespoons fresh lemon juice (from 1 lemon)
  • 1½ teaspoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon freshly ground black pepper
  • 4½ cups cooked shredded chicken (see note)
  • 3 scallions, light and dark green parts, thinly sliced
  • 2 ribs celery, finely diced
  • 3 tablespoons fresh chopped dill
  • 3 tablespoons fresh chopped Italian parsley

Instructions

  1. In a large bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, salt, sugar, and pepper until smooth and well combined.
  2. Add the shredded chicken, sliced scallions, diced celery, chopped dill, and parsley to the dressing.
  3. Gently toss all ingredients until evenly coated with the creamy dressing.
  4. Taste and adjust seasoning if needed.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes
