Copycat Lofthouse Sugar Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • Pinch of salt
  • Food coloring (optional)
  • 1/4 cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, cream butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk flour, baking soda, cream of tartar, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined.
  6. Chill the dough for 30 minutes in the refrigerator.
  7. Form the dough into tablespoon-sized balls and place on the prepared sheets about 2 inches apart.
  8. Gently flatten each cookie with the bottom of a glass dipped in sugar.
  9. Bake for 10-12 minutes until edges are just golden but centers still look soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. For the frosting:
  12. Beat the softened butter until creamy.
  13. Gradually add powdered sugar, mixing well after each addition.
  14. Add heavy cream, vanilla extract, almond extract (if using), and salt; beat until light and fluffy.
  15. Add food coloring if desired.
  16. Spread a generous layer of frosting on each cooled cookie.
  17. Immediately top with rainbow sprinkles.
  18. Allow frosting to set for 30 minutes before stacking or storing.

Notes

  • For the authentic Lofthouse flavor, don’t skip the almond extract in the frosting.
  • Slightly underbake the cookies for the signature soft texture – they should look barely set in the centers.
  • Store in an airtight container with a slice of bread to maintain softness for up to 5 days.
