Cowboy Butter Chicken Linguine

For the Chicken:

  • pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic salt
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

For the Sauce:

  • 4 tablespoons (¼ cup) cowboy butter, divided
  • ¾ cup heavy cream
  • 1 teaspoon garlic salt
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon lemon juice

For Garnish:

  • Lemon slices (optional)
  • Chopped fresh parsley (optional)

Instructions

  1. Cook linguine in salted water according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and season with paprika, garlic salt, kosher salt, and black pepper. Cook undisturbed for 3-4 minutes until golden.
  3. Add 2 tablespoons cowboy butter to the skillet. Flip chicken and cook another 3-4 minutes until internal temperature reaches 165°F. Remove chicken and set aside.
  4. Reduce heat to low. Add remaining 2 tablespoons cowboy butter, heavy cream, garlic salt, and red pepper flakes. Stir and scrape up browned bits until sauce is smooth.
  5. Return cooked linguine and chicken to the skillet. Toss to coat well. Stir in lemon juice until combined.
  6. Serve with optional lemon slices and chopped parsley.
