Cranberry Brie Puff Pastry Bites

  • 1 sheet puff pastry, thawed
  • 4 oz brie cheese, sliced
  • 2 tbsp cranberry sauce
  • 1 egg, beaten (for egg wash)
  • 1 tbsp fresh rosemary leaves, finely chopped (optional)
  • Salt and pepper to taste
  • 1 tbsp honey (optional)
  • 2 tbsp chopped walnuts or pecans (optional)
  • 1 tsp orange zest (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the thawed puff pastry and cut into 2.5-3 inch squares.
  3. Place pastry squares on the prepared baking sheet, leaving space between each one.
  4. Position a small slice of brie in the center of each pastry square.
  5. Top each piece of brie with about 1 teaspoon of cranberry sauce.
  6. For pocket style, fold one corner over to the opposite corner, creating triangles. Seal edges with a fork.
  7. Brush the tops with beaten egg wash.
  8. Sprinkle with fresh rosemary, salt, and pepper.
  9. Bake for 12-15 minutes until pastry is puffed and golden brown.
  10. Allow to cool for 3-5 minutes before serving warm.

Notes

  • For best results, ensure puff pastry is cold but pliable before working with it.
  • To make ahead, assemble bites and refrigerate for up to 24 hours before baking.
  • Leftovers can be stored in an airtight container for up to 2 days and reheated in a 350°F oven.
