Classic Cranberry Salad

  • 2 cups cranberries
  • 1 large orange, cut into small pieces
  • 1 cup white sugar
  • 1 cup chopped celery
  • 1 cup finely chopped walnuts
  • 1 cup crushed pineapple, drained
  • 1 (3 ounce) package cranberry (or raspberry) flavored Jell-O mix
  • 2 cups hot water

Instructions

  1. Place cranberries, orange pieces (with rind), and sugar in food processor and pulse until coarsely ground.
  2. Transfer mixture to a bowl and stir in celery, walnuts, and drained pineapple.
  3. Dissolve gelatin in hot water, whisking until completely smooth.
  4. Pour gelatin over cranberry mixture and stir to combine thoroughly.
  5. Transfer to serving dish or decorative mold and refrigerate until set, at least 4 hours or overnight.
  6. Serve chilled as a side dish or light dessert.
