Cranberry Walnut Chicken Salad

A perfect balance of sweet and savory flavors in a versatile chicken salad featuring dried cranberries and toasted walnuts.

 

Ingredients

  • ½ cup mayonnaise
  • ¼ cup sour cream or plain Greek yogurt, I prefer light sour cream or lowfat yogurt
  • 1 teaspoons fresh lemon juice
  • 1 tablespoon minced flat leaf parsley
  • ¼ teaspoon dried dill
  • 3 cups chopped or shredded cooked chicken, I use white meat from a rotisserie chicken
  • ½ cup finely chopped celery or finely chopped apple
  • ⅓ cup dried cranberries
  • ⅓ cup chopped toasted walnuts, see note
  • salt and pepper to taste

Instructions

  1. In a large bowl, whisk together mayonnaise, sour cream or yogurt, lemon juice, parsley, and dill until well combined.
  2. Add chicken, celery or apple, dried cranberries, and toasted walnuts to the bowl.
  3. Gently stir all ingredients until everything is evenly coated with the dressing.
  4. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled on bread, in a wrap, or over lettuce.

Notes

To toast walnuts, spread them on a baking sheet and bake at 350°F for 8-10 minutes until fragrant and lightly browned. Cool completely before adding to the salad. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
