  • 4 tablespoons Salted butter (½ stick)
  • 1 stalk Celery, diced
  • ¼ cup Onion, diced
  • ¼ cup All-purpose flour
  • ½ cup Whole milk/half-and-half/heavy cream
  • 1 cup Chicken broth
  • 2 cups Cooked chicken (diced or shredded)
  • To taste Kosher salt
  • To taste Ground black pepper
  • As needed Biscuits
  • Optional Fresh parsley or thyme

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add diced celery and onion, cooking until soft (about 5 minutes).
  3. Sprinkle flour over vegetables and cook while stirring constantly for 2 minutes.
  4. Gradually whisk in chicken broth and milk/cream until smooth.
  5. Cook until sauce thickens, stirring frequently.
  6. Fold in cooked chicken and reduce heat to low.
  7. Season generously with salt and pepper to taste.
  8. Split biscuits and spoon creamed chicken mixture over them.
  9. Garnish with fresh herbs if desired.
