1 medium green cabbage, chopped into 1-inch pieces
4 slices bacon, diced (preferably thick-cut)
1 cup heavy cream
2 tablespoons unsalted butter
1 small yellow onion, finely diced
2 cloves garlic, minced
Salt and black pepper to taste
1/2 cup shredded cheese (Gruyère or sharp cheddar)
1 tablespoon fresh thyme leaves
1 teaspoon Dijon mustard
1/8 teaspoon nutmeg
1/4 cup panko breadcrumbs
Instructions
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the diced bacon until crisp, about 5-7 minutes. Remove with a slotted spoon to a paper towel-lined plate.
Add butter to the bacon fat in the skillet. Once melted, add the onion and garlic, sautéing for 3-4 minutes until translucent.
Add the chopped cabbage, season with salt and pepper, and cook for 5-7 minutes until beginning to soften.
Stir in the Dijon mustard, thyme leaves, and nutmeg, cooking for another minute.
Transfer the cabbage mixture to the prepared baking dish. In a small bowl, whisk together the heavy cream with 1/4 cup of the shredded cheese, then pour over the cabbage.
Sprinkle the cooked bacon pieces over the top, followed by the remaining cheese and breadcrumbs.
Bake uncovered for 35-40 minutes, until the cabbage is tender and the top is golden brown.
Allow to rest for 5-10 minutes before serving.
Notes
For a spicier version, add a diced jalapeño and substitute pepper jack cheese.
You can prepare this dish up to 24 hours ahead and refrigerate before baking.
Leftovers can be stored in the refrigerator for up to 4 days and actually improve in flavor.
