Cheesy Chicken Enchiladas

Delicious homemade enchiladas with tender chicken, flavorful sauce, and plenty of melty cheese for the perfect Mexican-inspired comfort food.

 

Ingredients

  • 11/2 cups cooked and shredded chicken
  • 2 cups homemade enchilada sauce, divided or store bought
  • 21/2 cups shredded cheddar or Monterey Jack cheese, divided
  • 1/2 tsp table salt
  • 1/4 tsp ground black pepper
  • 8 homemade corn tortillas or store bought

Instructions

  1. Preheat oven to 350°F.
  2. Combine chicken, 1/4 cup enchilada sauce, 1 cup cheese, salt and pepper in a bowl.
  3. Warm tortillas until pliable (microwave with damp paper towel if using store-bought).
  4. Fill each tortilla with chicken mixture and roll tightly.
  5. Place seam-side down in 9×13 baking dish.
  6. Pour remaining enchilada sauce over tortillas and top with remaining cheese.
  7. Bake 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot with desired toppings.
