Creamy Garlic Chicken Pasta

This restaurant-quality creamy garlic chicken pasta combines tender chicken, perfectly cooked pasta, and a rich, velvety garlic cream sauce for an irresistible dinner ready in just 30 minutes.

  • 12 oz penne pasta
  • 2 large chicken breasts, 1 – 1.5lbs, butterflied lengthwise into 4 pieces
  • Salt and pepper for seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 6 cloves garlic
  • ½ teaspoon fresh finely chopped rosemary*
  • 1 cup low sodium chicken broth, or stock
  • 1 cup half and half or heavy cream, warmed
  • Parmesan cheese, for serving

Instructions

  1. Cook penne pasta according to package directions. Reserve ½ cup pasta water before draining.
  2. Butterfly chicken breasts, pat dry, and season with salt and pepper.
  3. Heat oil and 1 tablespoon butter in a skillet over medium-high heat. Cook chicken 4-5 minutes per side until internal temperature reaches 165°F. Remove and set aside.
  4. Reduce heat to medium. Add remaining butter and whole garlic cloves, sautéing 2-3 minutes until golden.
  5. Add rosemary and toast 30 seconds. Pour in chicken broth, scraping pan bottom to release flavor.
  6. Add warmed cream, bring to a simmer, and cook for 4 minutes to thicken.
  7. Slice chicken diagonally and return to the sauce. Simmer 5 minutes on low heat.
  8. Add drained pasta to the pan and toss. Add ¼ cup reserved pasta water to achieve desired consistency.
  9. Serve hot with freshly grated Parmesan cheese.
