  • 1 package (9-12 oz) fresh mushroom ravioli
  • 2 cups cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated (plus extra for serving)
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt and freshly ground pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 medium shallot, finely diced (optional)
  • 1 teaspoon fresh thyme leaves (optional)
  • 2 cups baby spinach (optional)
  • 1/4 cup white wine (optional)

Instructions

  1. Bring a large pot of generously salted water to a boil and cook ravioli according to package directions. Drain, reserving 1/2 cup pasta water.
  2. In a large skillet, melt butter over medium heat. If using shallot, add and sauté for 1-2 minutes until translucent.
  3. Add minced garlic and cook for 30-45 seconds until fragrant, stirring constantly to prevent burning.
  4. Increase heat to medium-high and add sliced mushrooms with a pinch of salt. Cook undisturbed for 2-3 minutes, then stir and continue cooking until golden and softened, about 5 minutes total.
  5. If using wine, add it now and simmer until mostly evaporated, about 2 minutes.
  6. Reduce heat to medium-low and pour in the heavy cream. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened.
  7. Remove from heat and gradually stir in the grated Parmesan cheese until melted and smooth.
  8. Season with salt and pepper to taste. If using thyme or spinach, add now (spinach will quickly wilt in the hot sauce).
  9. Gently fold in the cooked ravioli, coating each piece in the creamy sauce. If needed, add a splash of reserved pasta water to reach desired consistency.
  10. Serve immediately, garnished with chopped parsley and additional grated Parmesan.

Notes

For the best flavor, be patient when sautéing mushrooms – cook until they’ve released their moisture and are truly golden.

Freshly grated Parmesan melts much better than pre-grated cheese.

Mix mushroom varieties for more complex flavor – try adding shiitake, oyster, or chanterelle mushrooms alongside cremini.
