  • 2 teaspoons smoked paprika
  • 1/22 teaspoons cayenne pepper, to taste
  • Pinch of salt
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 poblano pepper, chopped
  • 24 jalapeños, chopped (seeded for less heat)
  • 2 cloves garlic, chopped
  • Salt and black pepper, to taste
  • 6 ounces cream cheese, softened
  • 1/3 cup sour cream
  • 4 tablespoons butter
  • 1/21 cup roasted or charred corn kernels
  • 1/3 cup plain Greek yogurt or olive-oil-based mayo
  • 2 tablespoons fresh lime juice
  • 3/4 cup mild crumbly cheese
  • 1/4 cup chopped cilantro
  • Roasted jalapeños

Instructions

  1. Broil whole jalapeños for 3-5 minutes until blistered, turning occasionally. Cool and slice for topping.
  2. Mix chili powder, smoked paprika, cayenne pepper, and salt in a small bowl.
  3. Heat olive oil in a skillet over medium-high. Cook onion until softened (about 5 minutes).
  4. Add poblano, chopped jalapeños, garlic, 1 teaspoon spice mix, salt, and pepper. Cook 5 minutes until peppers soften.
  5. Reduce heat to low. Add cream cheese, stirring until melted. Mix in sour cream and heat gently.
  6. Fold roasted corn kernels into the creamy mixture.
  7. In a separate skillet, melt butter until golden. Add 3 teaspoons spice mix and cook for 1 minute.
  8. Combine Greek yogurt or mayo with lime juice and salt until smooth.
  9. Transfer dip to serving bowl. Top with roasted jalapeños, drizzle with lime sauce and spiced butter, then sprinkle with cheese and cilantro.
  10. Serve warm with chips, bread, or vegetables.
