Creamy Queso Steak Rice Bowl

For the Steak

  • 1 lb flank or sirloin steak
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder

For the Queso Sauce

  • 1½ cups whole milk
  • Salt and black pepper, to taste
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese

For the Rice

  • 2 cups chicken broth or water
  • Salt, as needed
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Optional Garnishes
  • Fresh cilantro, chopped
  • Lime wedges
  • Sliced avocado
  • Sliced jalapeños

Instructions

  1. Pat steak dry and rub with olive oil. Season with paprika, cumin, garlic powder, salt, and pepper.
  2. Heat skillet over high heat. Cook steak 4 minutes per side for medium-rare or 5 minutes for medium. Rest 5-10 minutes before slicing against the grain.
  3. Rinse rice until water runs clear. In a pot, heat olive oil, add rice and garlic powder, and toast for 2 minutes. Add broth and salt, bring to boil, reduce heat, cover, and cook 18-20 minutes until tender.
  4. In the steak skillet, melt butter and cook garlic until fragrant. Add milk and bring to gentle simmer. Gradually stir in cheeses until melted and smooth. Season with cumin, chili powder, salt and pepper.
  5. Assemble bowls with rice, sliced steak, and queso sauce. Garnish with cilantro, jalapeños, avocado, and lime as desired.

Notes
