A delicious Asian-inspired meal featuring crispy chicken thighs, aromatic broth, fluffy rice, and fresh vegetables for a complete and satisfying bowl experience.

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 2 garlic cloves, finely grated
  • 1 tablespoon fresh ginger, finely grated
  • 3 cups cooked white rice
  • 1 tablespoon neutral oil
  • 1 shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 4 green onions, sliced
  • 1 tablespoon fresh ginger, minced
  • 1 to 2 cups mushrooms
  • 3 to 4 cups chicken broth
  • 1 tablespoon miso paste
  • 1 to 2 teaspoons soy sauce
  • 1/2 cup cornstarch
  • Neutral oil for cooking
  • 2 to 3 baby bok choy

Instructions

  • Marinate chicken thighs in soy sauce, hoisin sauce, sesame oil, grated garlic, and ginger for at least 30 minutes.
  • Cook rice according to package directions and keep warm.
  • In a saucepan, crisp shallot and garlic slices in oil until golden; remove and set aside.
  • In the same pan, sauté green onions and ginger briefly, then add mushrooms and cook until softened.
  • Add chicken broth and whisk in miso paste and soy sauce. Simmer gently.
  • Pat marinated chicken dry and dredge in cornstarch.
  • Pan-fry chicken in hot oil until crispy and cooked through, about 4-5 minutes per side.
  • Cook halved bok choy in the same pan until lightly charred.
  • Assemble bowls: rice on bottom, sliced crispy chicken and bok choy arranged on top, pour broth around (not over) the rice, and garnish with crispy aromatics.
