  • 1 (4 pound) chicken, cut into pieces
  • 1 cup buttermilk
  • 2 cups all-purpose flour for coating
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 2 quarts vegetable oil for frying

Instructions

  1. Cut chicken into pieces and pat dry with paper towels.
  2. Place flour, paprika, salt, and pepper in a large plastic bag and shake to combine.
  3. Dip chicken in buttermilk, then transfer to the bag with flour mixture. Seal and shake to coat completely.
  4. Place coated chicken on a tray and cover with a clean dish towel. Let rest for 20-30 minutes until coating becomes paste-like.
  5. Heat oil in a large cast iron skillet to 350°F.
  6. Fry chicken pieces until brown on both sides (about 3-4 minutes per side).
  7. Reduce heat, cover skillet, and cook for 30 minutes.
  8. Uncover, raise heat, and continue frying until extremely crispy (5-7 more minutes).
  9. Drain on paper towels before serving.
