Golden, crunchy parmesan-crusted chicken with a perfectly seasoned coating that’s crispy on the outside and juicy on the inside.

  • 4 boneless/skinless chicken breasts
  • kosher salt & freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/3 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 3/4 cups plain panko breadcrumbs
  • 1 cup freshly grated parmesan cheese
  • 1/3 cup olive oil, good-quality
  • lemon wedges & freshly chopped parsley, for serving- optional

Instructions

  1. Pound chicken breasts to 1/4-inch thickness by placing each in a plastic bag and using the flat side of a meat tenderizer.
  2. Season chicken on both sides with salt, pepper, garlic powder, dried oregano, and onion powder.
  3. Set up three dredging stations: flour in first dish, beaten eggs in second dish, and combined panko breadcrumbs and parmesan cheese in third dish.
  4. Dredge each chicken piece first in flour (shake off excess), then egg mixture, followed by pressing firmly into the breadcrumb-parmesan mixture.
  5. Heat olive oil in a large skillet over medium-high heat until shimmering.
  6. Cook chicken in batches (1-2 pieces at a time) for 3-4 minutes per side until golden brown and internal temperature reaches 165°F.
  7. Transfer to a wire rack or paper towel-lined plate between batches.
  8. Serve immediately with optional lemon wedges and fresh parsley.

Notes
