  • 2 large cucumbers, thinly sliced
  • 1 cup romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup Caesar dressing
  • 1/2 cup homemade croutons
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • 1 tablespoon capers, drained (optional)
  • 2 tablespoons fresh dill, chopped (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Wash cucumbers and slice them into thin rounds (about 1/8-inch thickness).
  2. Optional but recommended: Place cucumber slices in a colander, sprinkle with 1/2 teaspoon salt, and let sit for 15-20 minutes. Rinse and pat dry.
  3. Wash romaine lettuce, dry thoroughly, and chop into bite-sized pieces.
  4. In a large bowl, combine cucumber slices, romaine lettuce, and croutons.
  5. Drizzle Caesar dressing over the mixture, starting with half the amount and adding more as needed.
  6. Toss gently to coat all ingredients evenly.
  7. Sprinkle the grated Parmesan cheese on top, reserving some for garnish.
  8. Season with freshly ground black pepper and additional salt if needed.
  9. Gently toss once more to incorporate.
  10. Transfer to a serving platter or individual plates, sprinkle with reserved Parmesan, and serve immediately.

  • For the best texture, serve this salad immediately after assembling.
  • To make ahead, prepare all components separately and combine just before serving.
  • English or Persian cucumbers work best as they have fewer seeds and thinner skins.
  • Homemade Caesar dressing will provide the best flavor, but quality store-bought works in a pinch.
