Cucumber Pineapple Salad

  • 2 cups cucumber, diced (English cucumbers preferred)
  • 1 cup fresh pineapple chunks
  • 1/4 red onion, thinly sliced
  • 2 tablespoons lime juice, freshly squeezed

  • 2 tablespoons fresh mint leaves, chopped (optional)
  • 1 small jalapeño, seeded and minced (optional for heat)
  • 1 teaspoon honey (optional for extra sweetness)
  • 1/2 avocado, diced (optional for creaminess)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1/2 red bell pepper, diced (optional for color and crunch)

Instructions

  1. Wash cucumbers thoroughly. If using English cucumbers, leave skin on. For regular cucumbers, consider peeling. Cut into even 1/2-inch dice.
  2. Prepare fresh pineapple by removing skin and core. Cut into chunks similar in size to cucumber pieces.
  3. Peel and thinly slice red onion. For milder flavor, soak in cold water for 10 minutes, then drain and pat dry.
  4. In a large mixing bowl, combine cucumber, pineapple chunks, and red onion.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
  6. Pour dressing over salad ingredients and gently toss until evenly coated.
  7. If using mint leaves, chop and add to the dressed salad, folding gently to incorporate.
  8. Taste and adjust seasonings as needed.
  9. For best flavor development, refrigerate for at least 30 minutes before serving.
  10. Garnish with additional mint leaves just before serving.

Notes

  • English or Persian cucumbers work best as they have thinner skins and fewer seeds.
  • For a less watery salad, salt cucumber pieces and let sit in a colander for 15 minutes, then pat dry before mixing.
