Ingredients

  • 1 large English cucumber, sliced into thin half-moons (2½ cups)
  • 2 large tomatoes, about pounds, chopped
  • ½ cup thinly sliced red onion
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sea salt
  • Freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • ½ cup chopped fresh herbs, such as basil, parsley, dill, and/or mint
  • Flaky sea salt

Instructions

  1. Combine cucumber, tomatoes, red onion, lemon juice, vinegar, salt, and pepper in a large bowl.
  2. Allow mixture to chill in the refrigerator for 10 minutes to marinate.
  3. Using a slotted spoon, transfer salad to a serving bowl, leaving excess liquid behind.
  4. Drizzle with olive oil and sprinkle with fresh herbs.
  5. Finish with a light sprinkling of flaky sea salt and serve immediately.
