A creamy, flavorful chicken salad with curry powder, grapes, and cashews that’s perfect for sandwiches or as a stand-alone dish.

  • ½ cup mayonnaise best quality such as Hellmann’s or Duke’s
  • ½ cup sour cream
  • 1 tablespoon curry powder
  • 1½ tablespoons honey
  • 1½ tablespoons fresh lime juice from 1 lime
  • ¾ teaspoon salt
  • 4½ cups cooked shredded chicken
  • 3 large stalks celery diced
  • 1 cup seedless grapes halved
  • 3 scallions, light and dark green parts, finely sliced
  • Pinch cayenne pepper (optional)
  • ⅔ cup salted cashews

Instructions

  1. In a large bowl, whisk together mayonnaise, sour cream, curry powder, honey, lime juice, and salt until smooth.
  2. Add the chicken, celery, grapes, and scallions to the dressing mixture.
  3. Gently fold everything together until evenly coated, then taste and adjust seasoning, adding cayenne pepper if desired.
  4. Cover and refrigerate until ready to serve (at least 1 hour for flavors to develop).
  5. Just before serving, stir in the cashews to maintain their crunchiness.

Notes

For the chicken, you can use poached chicken breasts, roasted chicken (3 pounds bone-in, skin-on breasts roasted at 425°F for 30-35 minutes), or a store-bought rotisserie chicken. This salad can be made up to 2 days ahead but add cashews right before serving.
