A flavorful sandwich featuring spiced chicken, cooling yogurt-mint sauce, and crunchy slaw.

  • 2 pounds boneless, skinless chicken thighs
  • 2 teaspoons curry powder, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 1½ cups plain Greek yogurt, divided
  • 2 cups green cabbage, sliced
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1 fresh jalapeño, sliced
  • ½ cup Greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons fresh mint, chopped
  • 2 cups all-purpose flour
  • Vegetable oil, for frying
  • 4 sandwich rolls
  • 4 tablespoons butter
  • 2 cloves garlic, minced

Instructions

  1. Mix 1 cup yogurt with 1 teaspoon curry powder, cumin, coriander, salt, pepper, and lime juice. Marinate chicken for 30+ minutes.
  2. Combine cabbages, carrots, and jalapeño. In separate bowl, mix ½ cup yogurt with honey and mint. Add half to slaw, reserve rest.
  3. Mix flour with remaining curry powder, salt and pepper. Heat oil in skillet.
  4. Dredge marinated chicken in seasoned flour and fry until golden and cooked through (165°F), about 5-7 minutes per side.
  5. Melt butter with garlic. Brush on halved rolls and toast until golden.
  6. Assemble sandwiches with sauce on bottom roll, topped with slaw, chicken, more sauce if desired, and top roll.
  7. Cut diagonally and serve immediately.
