  • 2 medium whole wheat tortillas (cut into small pieces)
  • 1 cup beans, cooked and drained
  • 2 cups spinach
  • 1 1/2 cups shredded cheese

Instructions

  1. Preheat oven to 375°F.
  2. Heat avocado oil in an oven-safe skillet over medium heat.
  3. Add bell peppers and cook until softened, about 7-10 minutes.
  4. Stir in garlic, onion powder, and shredded chicken.
  5. In a separate bowl, combine tomato sauce, salsa, smoked paprika, cumin, chili powder, salt, and pepper.
  6. Pour sauce over the chicken mixture and stir to combine.
  7. Add tortilla pieces, beans, and spinach, stirring gently.
  8. Remove from heat and top with shredded cheese.
  9. Bake for 7-10 minutes until cheese is melted and bubbly.
  10. Let stand 5 minutes before serving.
