Breakfast Enchiladas

Delicious make-ahead breakfast enchiladas filled with sausage, cheese, and bacon, then baked in a creamy egg mixture until golden and bubbly.

 

Ingredients

  • 1 lb sausage, browned
  • 2 cups shredded cheddar cheese
  • 8 8-inch flour tortillas
  • 6 eggs
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 3 oz package Real Bacon Bits

Instructions

  1. Spray 13×9 inch baking dish with cooking spray.
  2. Mix browned sausage, 1 cup cheese, and half the bacon bits in a bowl.
  3. Place 1/8 of mixture in each tortilla, roll up, and arrange seam-side down in dish.
  4. Whisk eggs, half-and-half, flour, and salt; pour over tortillas.
  5. Top with remaining cheese and bacon bits.
  6. Cover and refrigerate overnight or bake immediately.
  7. Bake at 350°F covered for 35 minutes, then uncovered for 10 minutes until set.
