Classic lemon bars with buttery shortbread crust and tangy lemon filling – the perfect balance of sweet and tart in every bite!

  • 3 cups all-purpose flour 360g, divided 2 1/2 cups for crust and 1/2 cup for filling
  • 2/3 cups powdered sugar 66g, for the shortbread, plus more for dusting
  • 1/2 tsp salt
  • 12 tbsp unsalted butter melted, 170g
  • 3 tbsp lemon zest zest of three lemons
  • 3 cups sugar 600g
  • 8 eggs large, room temperature
  • 1 cup lemon juice fresh, 240mL

Instructions

  1. Preheat oven to 350°F and line a 9×13 baking dish with parchment paper.
  2. Mix 2 1/2 cups flour with powdered sugar and salt, then add melted butter and combine until dough forms.
  3. Press dough into lined pan and bake for 20 minutes until light golden.
  4. Process lemon zest with sugar until yellow and fragrant, then mix with remaining flour in a large bowl.
  5. Add lemon juice and eggs to sugar mixture, whisking until completely combined.
  6. Pour filling onto warm crust and bake for 25 minutes, rotating halfway through.
  7. Cool for 1 hour at room temperature, then refrigerate for 2 hours.
  8. Lightly sprinkle with powdered sugar, then slice using a clean, slightly damp knife, wiping the blade after each cut.
