Classic Creamy Pea Salad

A perfect blend of sweet peas, crispy bacon, and sharp cheddar cheese in a creamy dressing. An ideal make-ahead side dish for any occasion.

 

Ingredients

  • 8 slices bacon, diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon granulated sugar
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon coarse salt
  • 1/8 teaspoon pepper
  • 4 cups frozen peas, thawed
  • 1/3 cup diced red onion
  • 3/4 cup cubed sharp cheddar cheese

Instructions

  1. Cook diced bacon in a large skillet until crispy. Transfer to paper towels to drain.
  2. In a large bowl, whisk together sour cream, mayonnaise, sugar, apple cider vinegar, salt, and pepper until smooth.
  3. Add thawed peas, red onion, cheese, and three-quarters of the bacon to the dressing.
  4. Gently stir until all ingredients are evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving.
  6. Garnish with remaining crispy bacon just before serving.
