This creamy, cheesy Rotel dip combines ground beef, melty processed cheese, and zesty tomatoes with green chiles for the ultimate party appetizer.

 

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 yellow onion, diced
  • 1 (2-pound) block processed cheese (such as Velveeta), cubed
  • 2 (10-ounce) cans diced tomatoes and green chiles (such as Rotel)
  • 1/2 tsp. chipotle chile powder
  • Chopped fresh cilantro, for serving (optional)

Instructions

  1. Heat olive oil in a large nonstick skillet over medium heat. Add ground beef and diced onion, cooking while breaking up the beef with a wooden spoon until browned and cooked through (6-8 minutes). Drain excess fat.
  2. Reduce heat to low and add cubed processed cheese, canned tomatoes with green chiles, and chipotle chile powder.
  3. Cook while stirring constantly until cheese completely melts and mixture is smooth (2-3 minutes).
  4. Transfer to a serving bowl, sprinkle with fresh cilantro if desired, and serve immediately with tortilla chips.
