Crockpot Salsa Chicken

A simple, versatile slow cooker chicken recipe that’s perfect for weeknight meals.

 

Ingredients

  • 4 (6- to 8-oz.) boneless, skinless chicken breasts
  • 2 tsp. taco seasoning mix
  • 2 cups chunky red salsa, divided
  • Chopped fresh cilantro and lime wedges, for serving

Instructions

  1. Place chicken breasts in a single layer in your slow cooker.
  2. Sprinkle taco seasoning evenly over all sides of chicken.
  3. Pour 1 cup of salsa over the seasoned chicken.
  4. Cover and cook on high for 3 hours or low for 6-8 hours until chicken reaches 165°F internally.
  5. Shred chicken using two forks directly in the slow cooker.
  6. Add remaining 1 cup salsa and stir to combine.
  7. Garnish with fresh cilantro and serve with lime wedges.
