Sheet Pan Chicken and Potatoes

A simple one-pan dinner featuring crispy chicken thighs and roasted potatoes with herbs and seasonings.

 

Ingredients

  • 1 pound yellow potatoes cut into quarters lengthwise (peel if desired)
  • 68 chicken thighs (bone-in, skin on)
  • 34 tablespoons olive oil
  • Juice of 1/2 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 1 package poultry fresh herb mix (rosemary, sage, thyme)

Instructions

  1. Preheat oven to 400°F and position rack in the middle.
  2. Grease a large rimmed baking sheet or line with foil.
  3. Arrange chicken thighs and potato quarters on the baking sheet.
  4. Drizzle with olive oil and lemon juice, then toss to coat evenly.
  5. Sprinkle with garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
  6. Toss again to distribute seasonings evenly.
  7. Scatter fresh herb sprigs around and over the chicken and potatoes.
  8. Roast for 30-40 minutes until chicken reaches 165°F internally.
  9. Optional: Broil for 2-3 minutes at the end for extra crispiness.
  10. Rest for 5 minutes before serving.
