Egg Salad Sandwich

Ingredients

  • 6 large hard boiled eggs, peeled
  • 34 Tablespoons mayonnaise (or Greek yogurt), to taste
  • 1 teaspoon yellow mustard
  • Salt and pepper, to taste
  • 8 slices sandwich bread
  • Lettuce (optional, for serving)

Instructions

  1. Mash the peeled hard-boiled eggs in a medium bowl to your desired consistency.
  2. Add mayonnaise, yellow mustard, salt and pepper, then mix gently until well combined.
  3. Taste the mixture and adjust seasonings as needed.
  4. Spread egg salad onto bread slices, add lettuce if desired, and top with second slice.
  5. Slice sandwiches diagonally and serve immediately.
