  • 1 cup unsweetened almond milk
  • 2 eggs
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 2/3 cup oat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/3 cup chopped pecans
  • 1 teaspoon cinnamon

Instructions

  1. Combine rolled oats and almond milk in a large bowl and let stand for 10 minutes to soften the oats.
  2. Add coconut oil, eggs, vanilla extract, and maple syrup to the oats and stir to combine.
  3. In a separate bowl, mix oat flour, baking powder, sea salt, and cinnamon.
  4. Add dry ingredients to wet ingredients and stir until just combined, being careful not to overmix.
  5. Gently fold in chopped pecans.
  6. Heat a non-stick skillet over medium-high heat and lightly grease with coconut oil.
  7. Pour 1/4 cup of batter per pancake onto the hot skillet.
  8. Cook until bubbles form on the surface and edges look set (2-3 minutes).
  9. Flip and cook until the other side is golden brown (2-3 minutes more).
  10. Serve warm with your favorite toppings.
