Four Cheese Potato Rosti

  • 3 pounds red potatoes
  • 2 tablespoons butter, divided
  • 6 tablespoons olive oil, divided
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper, to taste
  • Four-Cheese Filling:
  • 1 cup soft cheese spread
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded provolone
  • 1/2 cup shredded cheddar
  • 1/2 cup grated parmesan

Instructions

  1. Parcook unpeeled potatoes in salted water for 10 minutes until slightly softened but still firm. Drain, cool, and refrigerate overnight.
  2. Peel chilled potatoes and grate using large holes of a grater. Season with salt, pepper, and thyme.
  3. Combine all five cheeses in a bowl until uniformly mixed.
  4. Heat 1 tablespoon butter and 2 tablespoons olive oil in skillet over medium heat. Add half the potatoes, pressing to form even layer.
  5. Spread cheese mixture over potatoes, leaving small border. Top with remaining potatoes, pressing to seal edges.
  6. Cook for 5 minutes until bottom is golden. Place plate over skillet and flip rosti onto it.
  7. Add remaining butter and oil to pan. Slide rosti back in, uncooked side down, and cook 5-7 minutes until golden and crispy.
  8. Transfer to paper towel-lined plate. Rest for 5 minutes before slicing.
