  • 5 large yellow onions, thinly sliced
  • 1 1/2 cups sliced mushrooms
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup chicken or vegetable broth
  • 6 cups chicken or vegetable broth
  • 2 teaspoons fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 bay leaf
  • 1 tablespoon Worcestershire-style seasoning
  • 2 croissants, sliced
  • 6 tablespoons butter
  • 2 tablespoons fresh parsley
  • 3 garlic cloves
  • 4 cups shredded Gruyère-style cheese

Instructions

  1. Melt butter and oil in a large pot. Add onions, salt, pepper, and sugar. Cook over medium-low heat for 45-60 minutes until deeply caramelized.
  2. Add mushrooms and cook for 10 minutes until browned. Add garlic and cook for 1-2 minutes.
  3. Sprinkle flour over mixture and cook for 2-3 minutes. Deglaze with 1/2 cup broth, scraping up browned bits.
  4. Add remaining broth, herbs, and Worcestershire. Simmer for 25-30 minutes.
  5. Make garlic butter by melting 6 tablespoons butter with minced garlic and parsley. Brush on sliced croissants and bake at 375°F for 8-10 minutes until crisp.
  6. Ladle soup into oven-safe bowls. Top with toasted croissants and cheese. Broil for 2-4 minutes until cheese is bubbly and golden.
  7. Garnish with fresh parsley before serving.

Notes
