  • ¼ cup honey
  • ½1 teaspoon black pepper, plus extra for serving
  • 1 wheel Brie (810 ounces)
  • 1 large egg, beaten
  • ½ cup panko breadcrumbs
  • ½ cup olive oil
  • 2 cups mixed olives, pitted
  • 2 tablespoons thin strips of lemon zest
  • Pinch of crushed red pepper flakes
  • 2 tablespoons drained capers
  • 1 tablespoon fresh thyme leaves, plus extra for serving
  • 46 slices prosciutto, cooked until crisp
  • Crackers or sliced bread, for serving

Instructions

  1. Mix honey and black pepper in a small jar; set aside.
  2. Coat the brie in beaten egg, then press into panko until fully covered. Freeze for 15-20 minutes.
  3. Heat a dry skillet over medium heat. Cook prosciutto until crisp, then transfer to a plate and break into pieces once cooled.
  4. In the same skillet, heat ¼ cup olive oil. Add olives and red pepper flakes, cooking for 5 minutes. Add lemon zest, capers, and thyme; cook 5 more minutes until lemon zest turns golden. Transfer to a bowl.
  5. Add remaining ¼ cup oil to the skillet. Fry the chilled brie for 2-3 minutes per side until golden brown.
  6. Place the fried brie on a serving plate. Top with the lemon-herb olives, crispy prosciutto, a drizzle of peppered honey, fresh thyme, and black pepper. Serve immediately with crackers or bread.

Notes

For best results, serve the fried brie immediately after cooking. The honey and olives can be prepared ahead of time. For a vegetarian version, omit the prosciutto. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
