Instructions

  1. Prepare a 9-inch round cake pan with non-stick spray or line with plastic wrap.
  2. In a large bowl, pour the lemon Jell-O powder.
  3. Add 1 cup of boiling water and stir continuously for 2 minutes until completely dissolved.
  4. Add 1 cup of cold water (or 3/4 cup cold water plus 2 tablespoons lemon juice for extra flavor) and mix thoroughly.
  5. Pour the mixture into the prepared pan.
  6. Refrigerate until fully set, about 4 hours or overnight for best results.
  7. For the frosting, combine heavy cream, powdered sugar, lemon zest, and vanilla extract in a chilled bowl.
  8. Whip until firm peaks form, about 3-4 minutes.
  9. Spread the whipped cream frosting evenly over the set jello.
  10. Refrigerate for another 15-30 minutes to allow frosting to set.
  11. Garnish with fresh berries or additional lemon zest before serving.
  12. Use a knife dipped in warm water for clean slices.
