Garlic Butter Lamb Chops

  • 8 lamb chops (about 2 lbs), 1-inch thick
  • 6 tablespoons unsalted butter
  • 68 garlic cloves, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves (optional)
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons fresh lemon juice (optional)
  • 1 small shallot, minced (optional)

Instructions

  1. Remove lamb chops from refrigerator 30 minutes before cooking to bring to room temperature.
  2. Pat lamb chops thoroughly dry with paper towels and season both sides with salt and pepper.
  3. Heat a large heavy-bottomed skillet over medium-high heat.
  4. Add butter to the hot skillet and allow it to melt completely.
  5. Add minced garlic, chopped rosemary, and shallots if using. Cook for 1-2 minutes until fragrant but not browned.
  6. Carefully place lamb chops in the skillet, making sure not to overcrowd (work in batches if necessary).
  7. Sear for 3-4 minutes on the first side without moving them to develop a golden-brown crust.
  8. Flip chops and continue cooking for 3-4 minutes for medium-rare (internal temperature of 130-135°F).
  9. During the final 2 minutes, tilt the pan slightly and spoon the garlic butter continuously over the lamb chops.
  10. Transfer chops to a warm plate, pour remaining sauce over them, and tent loosely with foil.
  11. Allow to rest for 5 minutes before serving.
  12. If using lemon juice, drizzle it over the chops just before serving.

Notes

  • For the best flavor, use high-quality lamb chops at least 1-inch thick.
  • The internal temperature for medium-rare lamb is 130-135°F, medium is 135-145°F.
  • Don’t skip the resting period as it allows juices to redistribute throughout the meat.
