  • 1 large English cucumber, sliced and quartered
  • 1 cup cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/2 cup pitted Kalamata olives
  • 3/4 cup crumbled feta cheese, plus more for topping
  • Greek Dressing
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons red vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon-style mustard
  • Salt, to taste
  • Black pepper, to taste
  • Lemon Garlic Shrimp
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons butter or ghee, melted
  • 1 to 2 garlic cloves, finely minced
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1/2 to 1 fresh lemon
  • Fresh parsley, finely chopped

Instructions

  1. Combine cucumber, tomatoes, red onion, olives, and feta in a large bowl.
  2. Whisk olive oil, red vinegar, oregano, mustard, salt, and pepper in a small bowl.
  3. Pour dressing over salad and toss gently.
  4. Mix melted butter with minced garlic in a small bowl.
  5. Toss shrimp with garlic butter mixture, salt, and pepper until coated.
  6. Heat a skillet over medium heat and add the seasoned shrimp.
  7. Cook shrimp for 2-3 minutes per side until pink and opaque.
  8. Remove from heat, squeeze lemon juice over shrimp and sprinkle with parsley.
  9. Serve shrimp over the prepared salad and top with extra feta if desired.
