Garlic Butter Steak

Ingredients

  • 2 ribeye steaks (1-inch thick, about 12 oz each)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • 1 tablespoon high-quality olive oil
  • 1 teaspoon Worcestershire sauce (optional)
  • ½ teaspoon Dijon mustard (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Remove steaks from refrigerator and let sit at room temperature for 30-45 minutes.
  2. Pat steaks completely dry with paper towels.
  3. Season both sides generously with salt and freshly ground black pepper.
  4. Heat a cast-iron skillet over medium-high heat until very hot.
  5. Add olive oil to the pan and swirl to coat.
  6. Place steaks in the hot skillet and cook undisturbed for 3-4 minutes until a golden-brown crust forms.
  7. Flip steaks and cook another 3-4 minutes for medium-rare (or longer for desired doneness).
  8. Reduce heat to medium-low and add butter, garlic, and herbs to the pan.
  9. Tilt the pan slightly and baste the steaks with the melted garlic butter for 1-2 minutes.
  10. Transfer steaks to a cutting board and let rest for 5-7 minutes, loosely tented with foil.
  11. Drizzle with remaining pan sauce and sprinkle with fresh parsley before serving.

Notes

  • For best results, bring steaks to room temperature before cooking and use a meat thermometer to check doneness.
  • Medium-rare: 130-135°F (54-57°C)
  • Medium: 135-145°F (57-63°C)
  • Medium-well: 145-155°F (63-68°C)
  • Always slice steak against the grain for maximum tenderness.
