  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/4 cup plain Greek yogurt
  • 6 cloves garlic, finely chopped
  • 2 tablespoons freshly grated ginger
  • 2 tablespoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 12 teaspoons cayenne pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large yellow onion, chopped
  • 8 ounces mushrooms, sliced
  • 1 can coconut milk
  • 1/2 cup tomato paste
  • 4 tablespoons butter, sliced
  • 2 tablespoons cold butter, sliced
  • 2 tablespoons sesame seeds
  • 1/2 cup fresh cilantro, chopped
  • Chili Butter:
  • 3 tablespoons butter
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon paprika
  • To Serve:
  • Steamed rice
  • Naan or flatbread

Instructions

  1. Preheat oven to 400°F. Place chicken in a baking dish and coat thoroughly with yogurt, garlic, ginger, and all spices.
  2. Add onion and mushrooms around the chicken. Pour coconut milk over everything and dollop tomato paste throughout, gently swirling it into the coconut milk.
  3. Top with butter slices and sprinkle with sesame seeds. Cover with foil and bake for 20 minutes, then uncover and bake 15-20 minutes more until chicken reaches 165°F.
  4. Meanwhile, prepare chili butter by melting butter with red pepper flakes and paprika in a small saucepan.
  5. Remove chicken from oven, let rest 5 minutes, then garnish with fresh cilantro.
  6. Serve over rice with chili butter on the side and naan for dipping.
