Pat chicken breasts dry with paper towels. If they’re very thick, butterfly them or pound to an even thickness of about 3/4 inch.
In a medium bowl, combine minced garlic, olive oil, grated Parmesan cheese, and shredded Asiago cheese. Mix thoroughly until it forms a paste-like consistency.
Season both sides of chicken breasts with salt and freshly ground black pepper.
Using a silicone brush or the back of a spoon, apply the garlic-cheese mixture evenly over the top and sides of each chicken breast. Press gently to help the mixture adhere.
If using panko breadcrumbs, sprinkle them over the cheese mixture and press lightly to secure.
Place the prepared chicken breasts on your lined baking sheet, leaving at least an inch of space between each piece.
Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.
Remove from the oven and let the chicken rest for 3-5 minutes before serving.
Garnish with fresh chopped parsley before serving hot.
