Ingredients

Scale
  • 4 center-cut beef chops (about 1 to 1.5 inches thick)
  • Salt and black pepper, to taste
  • 2 teaspoons Italian seasoning
  • 1/4 cup all-purpose flour
  • 1 to 2 tablespoons olive oil
  • 1 cup chicken broth
  • 3/4 cup beef broth (or substitute with more chicken broth)
  • 1/4 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 chicken bouillon cube, crushed
  • 1/2 teaspoon each: onion powder, oregano, basil, parsley
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup freshly grated Parmesan cheese
  • 2 teaspoons fresh lemon juice (optional)

Instructions

  1. Cover beef chops with plastic wrap and gently pound until slightly flattened.
  2. Season with salt, pepper, and Italian seasoning. Rest at room temperature for 40 minutes.
  3. Mix broths, cream, Worcestershire, Dijon, honey, bouillon, and seasonings in a bowl.
  4. Lightly coat chops with flour on both sides.
  5. Heat olive oil in a skillet over medium-high heat. Sear chops for 2-3 minutes on first side, 1-2 minutes on second side. Remove and set aside.
  6. Lower heat to medium, add garlic, and cook for 2 minutes until fragrant.
  7. Add butter and flour, stir to make a roux. Cook for 1-2 minutes.
  8. Gradually add broth mixture, stirring constantly. Bring to a boil, then simmer for 8-10 minutes until thickened.
  9. Stir in Parmesan cheese over low heat until melted. Add optional lemon juice.
  10. Return beef chops to skillet, spoon sauce over, and heat for 3-5 minutes before serving.
